hey @jdapolo , how's it been with your hackintosh? Did you find time to dig in?
I've been wanting mine to be more reliable; too many small things trip me up and when you're on a project and just need to get work done, you don't have time to troubleshoot.
Thus, I've been using my Macbook Pro, but really wishing I could take advantage of the power in my Hackintosh that isn't being used.
I've considered pulling the trigger and just buying a base model Mac Pro from Apple and then putting in my Radeon VII and the 64GB of ram in my Hackintosh.
I've also thought about swapping out this motherboard with another one that is more common so that I can just mirror someone else's setup and use their EFI.
Things that sometimes work, sometimes don't:
• bluetooth. Still no luck with Fenvi card, so I rely on the usb dongle which works, but not consistently and often hangs.
• audio. Sometimes I'll get consistent good sound out, and often I get crackly sound that hangs and stutters
• networking. I need to file share with my Macbook Pro that has a Thunderbolt 1 drive connected to it. Sometimes it shows up on my Hackintosh, and sometimes it doesn't. Drives me nuts, because when it doesn't show up, I can't work on the Hackintosh.
Seriously envious of anyone that has a 100% reliable hackintosh, because I really don't want to drop $6,000 on a mediocre machine from Apple, but I need reliability.

To answer some of your questions, I don't have to reboot to Windows first, then restart macOS. For me, after installing the drivers in Windows, my performance in macOS has greatly improved. I no longer have the bluetooth dongle plugged in; I'm only using the Fenvi T919 bluetooth and WiFi now.
I think using the massive antennas from my Evolve X case is probably also helping - I screwed those 2 cables into the Fenvi instead of the original WiFi inputs on the motherboard.
All that being said, my bluetooth keyboard would still occasionally hang, and not having a keyboard work 100% of the time is super frustrating. As such, I bit the bullet and paid $200 for the Logitech Craft keyboard. This way I can use the Logitech unifying receiver for my mouse and keyboard and no longer rely on bluetooth.
Bluetooth is still working really good though. My Apple Watch reliably unlocks the mac, I can use AirDrop, handoff, etc.
Audio, yeah I'm still just using USB audio since the audio outputs on the motherboard never worked reliably for me.
And yes, cmd+k for file sharing, but even that is not working right. I can't figure it out, but the nice thing is that it's not isolated to my hackintosh. I can't connect to attached USB drives on my MBP from even my MacMini. I think it has to do with FileVault maybe. I've asked on Apple's forums but still haven't gotten an answer.

I tried your Windows suggestion and I was having a smooth time until unfortunately just minutes ago, my bluetooth dropped again. Had to restart by screen sharing my Hack from my MBP. Anyway, yeah, it'd be really great if you could send me an updated EFI of your system. I still think there's some USB mapping issue I have with my EFI that's causing this bluetooth drops, cause if your bluetooth is working really well, then definitely, something is wrong with mine. Hi @jdapolo and @Covalt, I also have the Gigabyte Z390 Aorus Xtreme with the i9-9900K and a Radeon VII, and I was wondering if either or both of you have fully working OpenCore config. @jdapolo , it sounded like you had to make some changes--would you be willing to share your EFI? Do you have a pointer to the Dortania tutorial you referenced?
Does the EFI you posted earlier on this thread represent the best working setup, or are there other fixes you've identified and applied after you posted the EFI. If you've made other changes/fixes, is it possible to get an updated EFI, or some tips about what pitfalls you ran into and how they were addressed?
