Now I'm back to the normal out of lucky state. hahahahaha!
No deal, still hangs in the same spot. My first try, just copying config.plist, didn't work, I got a message saying "This version of Mac OS X is not supported on this platform", then I installed the Vega64 back, booted my backup and pasted everything from the Catalina Fresh Install.zip. Installed the 5700 XT back and then it went through and stopped at the same spot as before.
Tried with the iGPU off in the BIOS, no deal also.
I found this topic that it seems to be the same problem, after reading more than 20 pages it seens that they found a bootable config.plist but they don't mention what made it work, it is in the post #203.
BTW Ignore the freezing errors piano man talks about, it was a problem with the CPU in the end, nothing related to the 5700 XT.

I had to leave mine as iMacPro for it to keep the decoder supported - as soon as i switched to imac19,1 - which is my processor equivalent, it said decoder failed. Ok thanks.
