Ok I have some good news.
I've tried a new install following this guide : https://www.tonymacx86.com/threads/...gabyte-z390-i-aorus-pro-wifi-i9-9900k.267897/. Everything seems ok now.
Apparently, ErP shoud be enable in BIOS in order for sleep to work + EmuVariableUefi-64.efi and side=0 option.
The only issue now is that ErP seems to make my motherboard coil whine when moving the mouse... But that is an other issue and Mojave is now working fine.

Edit : Actually, sleep still provoke reboot. The difference is that I'm now able to boot into mojave after that.

If you already have emulated NVRAM installed, I don't have any other suggestions... Usually, non-functional NVRAM is the cause...
