[SUCCESS] Gigabyte Designare Z390 (Thunderbolt 3) + i7-9700K + AMD RX 580

On the internal SSD, the EFI drivers belong in CLOVER/drivers/UEFI. Most of the drivers were already there, but the old legacy drivers64UEFI folder was still present. I've removed that folder and also added SMCHelper.efi.

Please try the attached CLOVER folder from internal SSD.

This might be okay. Let's remove the -v option from config.plist (in EFI partition of Mojave SSD) and reboot. Then test the system for reliability and make a full bootable backup:
Some things to check:
  • Sleep / wake.
  • Run Hackintool and see whether VGA Decoder is supported. It will say so right in the opening screen, towards the bottom.
  • Log in to iCloud then test if you can log into Messages and FaceTime.
  • See if Mac App Store works and you can access your purchase history.
  • Check iTunes/Music app
  • See if you can play movies in iTunes/TV app.

Please compress and upload the CLOVER folder from EFI partition of your Mojave SSD. You may remove serial numbers from SMBIOS section of config.plist.

Notice below that your EFI folder contains two sets of drivers:
  • The new drivers/UEFI folder in red
  • The old drivers64UEFI folder in blue
Please delete entire BLUE folder (drivers64UEFI), empty the trash, and reboot. Does it help?

Just removed -v and booted fine.

Sleep is weird. Once it gave a screen that looks like snow on an old tube TV and I was forced to restart, but now when I try it again it works fine.

iMessage seems to be working fine as well as iCloud.
App Store works and purchases history works as well.

Music, Apple TV, and Podcasts will not accept my apple ID (triple checked with each app that I am using the same info for iMessage and iCloud)

EDIT - this question no longer applies as djx8605 provided a direct link - Do you happen to have a direct link to Hackintool? Don't want to risk downloading the wrong app and having malicious files on the computer.

Unfortunately not. Same issue. The system partition still boots normally.
