Personally, I feel that loss of native NVRAM is the biggest issue for Z390.
 
Other than shutdown/restart and sleep, what other problems do you see that are related to lack of native NVRAM?

No logging on kernel panics. That's very important when trying to troubleshoot a problem.
 
Yes, you can do that.
  1. Connect the drive from either your MacBook or older hackintosh to your new hackintosh.
  2. Boot from the USB flash drive that contains the EFI folder.
  3. At the Clover boot menu, select the drive that was pulled from your MacBook or hackintosh.
  4. Once macOS is up and running, you can clone the drive to your 970 EVO.
If you use the drive from your older hackintosh, make sure there are no hackintosh related kexts in /System/Library/Extensions/ or /Library/Extensions/.
I was able to boot from the other drive. On cloning, it froze the computer at the last step of the process (tried twice), but using disk utility, I was able to repair the drive and boot from it. It's not stable, crashes on sleep, and I have no internet, but at least it boots (sometimes)

Please show me what you have in /Library/Extensions/.

You can also try creating the USB installer again. Make sure that the macOS installer you download from the Mac App Store is the full installer (approx 5GB). There has been instances where the downloaded installer is very small and those will not work.
 
The earlier shutdown/restart and sleep problems seem fixable with emulated NVRAm as you observed with H370.

More of an issue is audio with certain Z390 boards, e.g., ASUS TUF Z390-M PRO and some other boards that have REALTek S1200A audio - doesn't work with latest AppleALC and LiLu, at least not so far and maybe never.

In general, Z390 boards with more common audio codecs, e.g., S1220A and others supported by AppleALC may be OK.

In the end that gigabyte H370 had issues with sleep and emulated NVram.
I had to disable sleep altogether.
 
Even using the MultiBeast Clover + Emulated NVRAM?

Have noticed that emulated NVRAM seems to "override" Clover's normal boot last volume - are there any elegant fixes for this?

I think your problems may be related to lack of native NVRAM. Please see the follow thread for more information. It appears other Z390 motherboard users had similar problems as you are having.
