Theoretically any of these three can be used. But :
For (1), you can use a 10th generation i3/i5/i7/i9 CPU with integrated graphics (e.g. i3-10100) and then it should be possible to install MacOS (Catalina or later) using the CPU integrated graphics. With a F CPU (no integrated graphics) or a 11th generation CPU (e.g. i5-11400) you must also have a supported AMD graphics card like a RX 580 or RX 6600 (Monterey or later for the RX 6600).
For (2), you must also have a supported AMD graphics card to install and run MacOS.
For (3) there are two different revisions of the motherboard. The first version used the H510 chipset, meaning you need a supported AMD graphics card to install and run MacOS. The second version (R2.0) used the H470 chipset, meaning when paired with a 10th generation i3/i5/i7/i9 CPU with integrated graphics (e.g. i3-10100) you can use it to install and run MacOS (Catalina or later).

You mentioned the possibility of using 11th generation CPUs. According to the buying guide on this forum, I had understood that it was limited to 10th generation CPUs. Because of this, I'm having difficulties finding a processor and motherboard here in Brazil. Can you tell me which generations are still compatible?
For a safe and hopefully trouble-free build: 400-series chipset and 10th generation CPU. These correspond to the last real Macs using Intel processors.
If you're more willing to hack, you can pick 500-series chipset, 11th generation CPU with 400 or 500 chipset, or 12th-14th generation CPU with 600-700 chipset. All will require a compatible AMD GPU.
