Are you using the EFI that I provided unchanged? If yes, deleting those kexts should have no affect on anything.
Yes it is unchanged. I put it in here.

I deleted nearly all kexts you marked red now, except of "AppleMobileDevice.kext" because when deleting this, the OS says something like "it can't be deleted because it's needed."
My actual kexts system folder in /Library/extensions looks like this now:

Do you have any suggests about the lagging mouse?

Ok I deleted AirportBrcmFixup.kext & GenericUSBXHCI.kext.
My /Library/extensions is now:

  1. Audio is working
  2. Mouse lagging seems to be better, but can't say for sure until now Edit: mouse is lagging more and more the longer the system is running
  3. Apple ID / iCloud keeps logging off and asks for new login in sys prefs, music, App Store.
  4. iMessage working good
  5. Still forgets screen resolution in boot- and login screen until desktop loads after login.
I already tried to use the Reporting tool, but keep getting the known error "-bash: gen_debug: command not found" when trying to get a report.

I've never even tried to configure screen resolution prior to desktop.

Use 5GHz Wi-Fi so that it doesn't interfere with Bluetooth.

Open up the config.plist and check to make sure Clover Configurator generated a proper serial for you.

Sounds like the serial is good.

If the mouse is Bluetooth. You will have to figure out what's causing poor reception. Try not to use too many 2.4GHz devices around the computer/mouse. Even microwave ovens can affect reception.

I will keep an eye on it, but can not imagine that WiFi is the real problem. Because I had a working MBP with multiple Bluetooth connections working fine. However I changed the WiFi network, which the Mac is connected to, to 5 GHz only. Also the Mouse is a Logitech device which is not bluetooth, but using the Logitech's propertiary 2.4 GHz thing.

Just a moment ago the first panic / total freeze happened. I copied a folder with around 20 GB to my local NAS while simultaneously browsing in Safari. This even happened a second time right after I rebooted.

I am currently stuck on this guide and have successfully completed the first guide you linked.
I posted my problems with the steps in the thread there.
 
Current Status of trying to fix USB:
I just moved on with the Guide above. See here. Therefore I deleted every not used Port in Hackintool -> USB, exportet the USBPorts.kext -> Replaced the USBInjectall.kext in EFI/CLOVER/kexts/Other with the just exported USBPorts.kext.
After rebooting the system doesnt boot anymore, but is in a panic loop and keeps rebooting.
