Update: It's still at half duplex but I have figured out that the OS is recognizing i226 correctly. The system report shows the Vendor as 0x8086 and the Device as 0x125c, which is accurate according to the Linus Kernel Driver Database.
I upgraded my hack to a Asus ROG Strix z790-a gaming wifi d4, which uses the z790 chipset and Intel's i226-V ethernet controller. I used @CaseySJ AppleVTD settings below and it has connectivity, but it's only at half-duplex. If I take it off Auto, and set myself it doesn't connect.
