I learned the following, this may help you guys out:
1) I messed up, had the i7 2600 and NOT the 2600K. Therefore no HD3000. Dropped a GeForce 9400gt graphics card in my PCIe and it booted up just fine in pretty big...
Customac Mini GA-H67-USB3 Build with CPU upgrade to i7 and using onboard HD3000.
Don't know how to get around this.
Installed 10.7.2 clean (not via SL) from Unibeast Drive. Worked great, now cannot reboot past grey screen with working mouse and apple logo.
The only way I can get to this...

Thought I should leave y'all with an update:
Tried a million things and then extra-thoroughly returned to some to make sure I hadn't missed anything, here's what I did to fix it:
-I was using a VGA cable, every boot combination didn't work...

Still no luck, already updated bios, tried all sata and USB ports, graphics enabler no, -x -f pcrootuid:1, rboot to get to Unibeast (even thought it is not necessary, computer boots fine straight to unibeast).
I think I am giving up on this...

Was using usb 2.0 already, switched SATA from white to blue port, although so far it has made no difference, still stuck booting from the USB (Unibeast) drive.
Interesting thing:
The "Waiting on "uuid" etc.. / still waiting for root device"...
Really baffled by this one. Attempting to clean install lion via Unibeast to GA-H67-USB3 with updated (f7) bios and all bios settings adjusted to hack ideals. HDMI out, or VGA out, doesn't seem to make a difference. Tried Uni in every single usb port. No difference.
Unibeast USB drive boots...
1) 10+ unsuccesful snow leopard updates to 10.6.8 (with update helper, chimera 1.5 AND 1.6) led me to 10.6.7 (only OS that works so far)
2) 5+ unsucessful attempts to update from 10.6.7 to Lion via Unibeast OR XMove
3) Now attempting a clean install of Lion using Unibeast and can't get to the...
