Yeah, that 5700xt is probably mucking things up. I'm going to do a bit more sleuthing around the internet and troubleshooting. Thank you for all your help!

Maybe try installing using just the IGPU and adding the 5700 XT after installation is complete.

Apologies for never replying back! I had to re-install my rx580 to complete the installation, then put the 5700xt back in.
