Made those additions and was still left with the prohibitory symbol. Should I revert back to a previous CLOVER that was just getting stuck at the sleep screen and try a new fix from there or is there something else that I may be missing for the new 'still waiting for root device' error.

Happy 4th of July by the way!

Thank you.
  • Clover >Kexts/Other: OK
  • config.plist_USB >FixOwnership OK
    • config.plist_Devices_Audio NOT just OK but not the cause of current issue.
  • Have you made any BIOS Changes?
  • I suggest taking a look at BIOS _Peripherals_ USB related Options[See image]
  • If BIOS OK, check USB port and USB Flash drive for problems.
Edited to add: Check this link #2
May be you don't need GenericUSBXHCI.kext once you have XHCI-unsupported.kext

Unfortunately that did not resolve the issue. Do you think I may need to recreate the USB installer?

That is the BEST OPTION.
Would saving my current CLOVER be ideal? And just adding it back in to a clean installer usb, or should I configure everything manually in a new CLOVER.

Saving the CLOVER that helped you boot is halfway to install. It may not be perfect , but less work to tweak than starting from the bottom without any other help. I would keep it in a folder with a notation how much it helped and what it did not accomplish.
