You can upgrade to Catalina probably.
A user on another forum has installed Catalina on a similar Sandy Bridge motherboard but with a GT 710.
I really know if it's possible on this motherboard with the RX 580.

No, this is the first time what do you think about High Sierra?

I have just install el capitan and not try to upgrade on the newest osx version yet.
If people have installing Mojave or catalina with success, installing High sierra should not cause problems.You can download a newest version with your mac but the catalina install is less documented.
I want to try a fresh catalina install but my old graphics card isn't compatible with this os version..I need to buy a new one but i want be sure about compatibility with my mobo.

Make sure to install legacy, as your board AFAIK is not UEFI. You will need to disable USB 3 in BIOS. The Z68 boards are notorious for sleep wake problems, I never got mine working well since Mavericks. Take a look at this guide for your board;
