macos monterey update not found the requested version of macos is not available

Look for SystemProductName in config.plist.

You will also need to add CPU details to your profile otherwise it's difficult for anyone to help.

What is the SMBIOS you are using for Big Sur ?

What do you see in: System Preferences > Software Update?
Do you see a Monterey icon and an 'update' button?

What is in SystemProductName in config.plist?

More than likely this is a System-Definition issue.

Let us know what you are using: iMac14,2 or iMac17,1 ? Etc., etc.

Do you see a Monterey icon and an 'update' button?

What is in SystemProductName in config.plist?
I get the message that my Mac is up to date, iMac 15,1

probably due to unsupported smbios

also your nvidia is not supported
just downloading Monterey should work, I've heard that there's a patch for Nvidia but I don't know how it works

iMac15,1 support was dropped in Monterey. Try either iMac16,2 or 17,1 instead then you can download the OS.

How are you downloading Monterey; through the AppStore?

The Nvidia-Kepler-Patcher may work for you - some people have had success with it - but, I suggest you don't rely on it as a magic cure. The best solution going forward is to get yourself a new AMD graphic card; an AMD RX 580 (Polaris), or better, considering Apple has dropped support for so many Nvidia cards.

Open your config.plist with an editor like PlistEditPro app and then type in the new SMBIOS where you now have iMac15,1. Note that if you switch it longer term for Monterey you have to generate new serials and SMUUID as well.
