Well, the HDD did not appear with diskutil list or in Disk Utility. Sorry for not using concise language.
You also mentioned the NVMe SSD not appearing.
It may not appear in Disk Utility without the correct "View" setting, but if it is not appearing in 'diskutil list' you have some other problem.
HDD not appearing (in either) can be explained by missing SATA-100-series-unsupported.kext.
It appears now that I have the kext installed. It won’t format as APFS or HFS+ though, it just fails.
Did you repartition such that the only partition is the macOS partition?
No. Under “details”, it says “MediaKit reports not enough space on device for requested operation. “
It sounds like you didn't repartition the disk.

I’m not trying to preserve a Windows install, but I am trying to preserve something. Sorry, and thanks again. My last hackintosh worked amazingly thanks to you, so hopefully this one will too !
No matter what you're trying to preserve (Linux?), it seems the EFI partition is too small.
