Hi!

I'm new to the Mac scene...

What Mac is nearest to my build?

Also if anyone can recommend which OS to go for?

Plan is to make a dual boot hackintosh. Running Win10 on one SSD and the MacOS on the other SSD

The GTX 1660 Ti is not supported on MacOS due to lack of Nvidia drivers.

The best way forward is to remove the card and (1) use CPU integrated graphics, or (2) replace it with a supported AMD card like RX 580 or RX 5000 series.

When using CPU integrated graphics you can install and run MacOS Mojave or later.

Keeping the Nvidia card is not ideal in my opinion as the card may still interfere with operations when in MacOS. But if you want to keep the card, you will have to use CPU integrated graphics via the DisplayPort or HDMI port on the motherboard (I recommend using DisplayPort) and find a way to disable the Nvidia card when running MacOS.
