HA! Well very good news here guys. Got all three monitors working simultaneously. It turned out that the DisplayPort problem was actually someone else sticking their fingers in the pie and they changed VGA cables on me to the DisplayPort adapter without my knowing.
The real solution is simply to enable and use Legacy Support. Following that all three monitors work fine and BOOT FINE after disabling the kernel cache. You'll get lower res clover, but that's seemingly the only "negative" aspect.
