If hackintoshing didn't exist, I would probably go for a Mac Mini and stack it on top of an eGPU box.

I'm wondering how long before the T2 successor will be taking over the chipset portion and we'll not be able to built hackintoshes as we cant get T2 in PCs ;(
 
"User up-gradable RAM".

To upgrade the RAM, you must completely pull the logic board.
The average user can not do this.
Calling the RAM "user up-gradable" is really stretching it.

Hold on to the original RAM, you will have to put it back in before you can get the unit serviced.

Are there any benefits of setting a system definition to Mac Mini?

In a hack build, it can be beneficial. It depends partly on how close the hardware matches that of the defined Mac. Some users, including myself, buy parts that match a given apple system (CPU, Graphics, motherboard chipset etc). It can save time and result in fewer third party kexts.
