I can't install Monterey because my SSD doesn't want to mount in the installer

Well I guess that must depend on two things:

1) The USB port you are using for the dongle. The safest until you have properly mapped your USB ports would be a USB2-only port very close to the keyboard connection on the back panel. Better still if a wired Apple keyboard then one of the keyboard USB ports.

2) What chipset the USB wifi dongle uses.
The Wi-Fi dongle is NOT universal, it needs special drivers even for macOS. It's the Netgear A6150 and has the Realtek RTL8812BU chipset.
In the meantime i tried to use a kext for USB Tethering (HoRNDIS) but it doesn't work, crashing the boot process.

Okay.

If you have a full macOS installer you do not need an internet connection at all. It will install locally. It sounds like you may only have either a "stub" or "Recovery" package.

You're right, i have a "Recovery" package, i tried some hours ago to burn a full macOS installer to another USB (with OpenCore and same EFI folder and config.plist) but when i try to load the installer my PC reboots.

Try using UniBeast for Catalina to create the Catalina installer. It uses Clover but should certainly boot. Once installed you can then change to OpenCore for later macOS versions.

Hello, I've been troubleshooting at it a bit for some hours now, without UniBeast I succeeded to boot and install macOS Catalina (had to modify SecureBoot from Default to Disabled in config.plist of old USB) but now I have another problem, when I try to boot into the SSD to continue the installation, OpenCore gives up and gives me this error, what should I do? I already tried searching but nothing helped for now.

I am unsure why you won't use the UniBeast Catalina installer? It works.

If you are struggling with OpenCore then UniBeast will get you installed. From what you tell us, you have got around the Lexa incompatibility using an SSDT, well just place that in the Clover bootloader of your UniBeast installer.

You don't have to install Clover on the main drive if there is some reason you do not want to.

Since OpenCore doesn't want to work, I'll try to use UniBeast to instal Catalina.
I didn't use UniBeast since I wanted to save some time to install Catalina, seeming OpenCore doesn't want to work, ill install it with Clover. By the way, no, I bypass the Lexa incompatibility with the "-radcodec" boot argument.

Ah, right. I thought you had to provide a spoof device-ID for the AMDRadeonVADriver.bundle for that to work. My bad.

Once you have installed Catalina you can change to OpenCore when you have mastered what you need.

Well, we have a problem even with Clover here :(
I installed the macOS Catalina Installer on my other Hackintosh (Lenovo Thinkpad X240), but when I try to make the USB it remains stuck at "Copying files" and doesn't move. I tried using another USB with no avail.

The only thing that - usually - stalls the UniBeast installer being created is the partition size of the USB stick and the USB port being used ...

You need a USB stick no bigger than 32GB and use a USB2 port.
