It's not necessary to delete oldConfig.plist. It would be good to do this:

- Mount EFI partition -- and make sure only ONE EFI partition is mounted
- Open config.plist from EFI/OC folder in the EFI disk (use OpenCore Configurator)
- Click on the PlatformInfo --> DataHub section
- Check if the following fields all look right (these are all new numbers I just generated for this post; yours will be different):
