Where you boot OpenCore/Clover from should make no difference.
I solved this problem by disabling the vodoops2 drivers)
now when booting catalina I encountered the problem "detected device nuvoton ..." apparently this requires disabling some kext

I don't know why disabling VoodooPS2 would solve anything...

Nuvoton detected is good. That's what will give you sensors via VirtualSMC.
 
I've never tried what you are attempting to do...

Try setting IGPU to be "primary display" in BIOS. Don't connect a monitor to your RTX 2070 and try this EFI. Please let me know how it goes.

So I've been using this EFI for a while, but I'd soon need to update to get support for my HDR monitor & the new Final Cut Pro. So I'd need to install Big Sur. Is there a way for you to update this EFI you had provided me? (What I'm replying to.) Or just explain to me what it is you did? I've been trying to do it myself with the latest EFIs (even tried the OpenCore one, but shouldn't have because I did a reset NVRAM and then lost my UEFI boot menu, p.s. was able to get it back).

I'll explain once again my setup / what I'm doing. I have 2 graphics card, one is an RTX 2070 for Windows only, one is an RX580 for macOS. When I startup my computer for Mac, I use the integrated graphics to boot, then, once I'm in macOS, plug the HDMI in the RX580 instead of the motherboard, and it uses those graphics instead. It's been pretty great as of now, everything works, but I'm starting to have the need to update. I'd be willing to try OpenCore too, if ever that's easier.

Here's my EFI, followed the steps on here. Couldn't find AAPL,ig-platform-id and device-id, they weren't there, but was able to do everything else.

Wow. You haven't updated in a long while...

Try using the latest Clover EFI in post #1 but replace the config.plist with the one attached below.

Alright, so I'm getting the same error as when I tried it before. If you need more of the verbose boot, I can send the video instead or multiple screenshots.

Do you still have the RTX 2070 installed? Are you still just using IGPU?

What is the Corsair RGB device?
Is the screen shot where the booting stopped?

Yes the screenshot is where the booting stopped, the corsair thing is my mouse pad / mouse. I unplugged after reading that too and it did the same error boot-uuid-media. The RTX is installed but no output is used, so is the RX580. The only output used is the HDMI port of the motherboard.
