Need help with 10.14 / MacPro-ish configuration (total noob!)

Ok, I was able to boot from the SSD, and restore my backup of my original(ish) clover, to the backup I made before doing a full delete/copy/paste from the one you provided.

I can still boot with that back in place, but I'm also still getting the panic on shutdown.

I do have a disk I can clone onto temporarily so I'm going to read up on that now. Back with details ASAP.

I don't mind trying that again but I seem to remember it didn't work last time. What is the goal of swapping that in?
 
It took me a while to realize that rufus is a Windows program for creating a bootable thumb drive from an ISO. I don't have a windows machine available to do that, so I'm trying to work out a way to do it from OSX. If you have any advice I'll be happy to try it out. For now I'm hunting for a method. I tried this one but it won't boot the drive that I created.
I often create Clonezilla through Windows and Linux and once through Mac terminal .
If you are ready for Terminal Mac I can post the steps. I might have already posted to this Forum . But I cannot recall.

The thumb drive I'm planning on using for clonezilla is one that I previously tried to use as my OSX install drive, so it has an EFI partition on it that I've been struggling to remove. I'm in the middle of a secure format of the drive now, hoping that does it. I've got clonezilla downloaded and converted to UDRW. I'll report back how that goes once it's done formatting.
 
I was able to make the clonezilla thumb drive, but when I reboot with it plugged in, it displays like this (attached) and trying to select it to boot, the screen goes dark and then within a second or so it comes right back up to clover.

Did you create the Clonezilla bootable Installer disk correctly?
Did you see the Clonezilla installer USB in BIOS > Peripherals > USB and make it Auto?
Did you make it in Boot Option Priorities as Boot option #1 to boot?
Did you select Clonezilla installer USB in F12 screen?
If your answers to any is no /or unsure, it won't boot .
You need to go back and remedy that wrong step.

From your image, I think the other bootable disk took you to CLOVER screen,
You have to use F-12 screen as this disk is not booting using CLOVER,
It has its own boot loader from BIOS to its interface.
Reboot and try F-12 and select the disk and see if that was the step missed.

Clone seems to have worked fine. I'm replying from the machine running from the cloned drive. I'll shut it down and take the clone out for safe-keeping. What's next?

After a very long day, I am like a spent bullet. My Grey cells are calling it quits. Eye lids need tooth pick to hold them up. Can we start after another 8 hrs?
Or there may be others to help you from here.
Now that you have a Rescue disk, you can pretty much try anything to fix the issue.
Whatever you do use your Camera freely to get screen shots for future analysis and diagnosis.

If you have the time, energy, and interest to help others, can you do a short write up of how you did the cloning.
If you can add images to supplement the text, that will be awsome.

Since you did not post what happens when you start or shut down the newly created macOSMojave system after creating the System Disk Clone, nor did you post the details of how you created the Clonezilla USB installer in macOSMojave and created a clone of macOSmojave system disk on another disk, I guess there are no booting or shutting down issues.

If you have additional problems , then post with screen shots what happens when you boot or shut down and the current CLOVER as zipped file from the hidden EFI Partition of the System Hard disk where you are encountering the problems.
