Switching Clover from HDD to SSD Raid 0

I am thinking about buying a pair of SSD to make it Raid 0. Is there any way to easy copy all my system files from HDD to the Raid? (Including the EFI partition and clover settings). Any guide for making this switch?

Assuming you already know how to use terminal commands to create an Apple RAID array or you plan to use SoftRAID, it's pretty straight forward:

1) Create RAID array
2) Copy everything from your current EFI partition to one or both RAID drive EFI partition. Easier to copy to both unless you know exactly which one to select as your boot drive in BIOS.
3) Use Superduper to copy single HDD to RAID
4) Reboot, change boot drive and then select the RAID array at the clover boot screen.

An easier way to manage this is to get a small and cheap SSD drive to use purely as Clover boot. This way you can completely skip step #2. Also since you will be using RAID 0, it is very important to make regular full clones in case of drive failure. You can use SuperDuper and if you have a dedicated clover boot drive, you don't need to worry about copying EFI at all.

How can I create an EFI partition on both RAID drive? The one I have at the moment on my HDD was created by the clover installer I guess, so I did not make the partition.
I would like to have that RAID as the boot drive by the way.

It should automatically create EFI partition when you create the RAID but since El Capitan removed all RAID options from disk utility, I don't know how this is accomplished in terminal. You may want to look at Softraid. It is a full featured RAID management app but cost $50 and OSX treats all the SoftRaid volumes as external drives so the icons display on your desktop.
