Wanting to Update to Catalina... Can I? And How?

I'm running El Capitan currently and I'm cautious to update because I would have to change my system definition. What would be a safe system definition to pick? I'm currently running Mac Pro 3,1.

Here's my setup:
GTX 960 & Intel i7 3.4 (unsure of what exact model. I'm an idiot and threw away the box and my notes)

Any help appreciated. Thank you!
 
There are no Catalina drivers for your GTX 960.

You can check your processor spec in the BIOS settings screen.
 
If you remove the GTX 960 you can run Catalina using your processor's integrated graphics.
The same goes for Mojave.
If you want to use the GTX 960 then High Sierra is as late as you can go, with the addition of the Nvidia web drivers.
