yeah, some changes in Catalia that many of us needed to make. I had issues that I needed to address when moving from Mojave to Catalina as well. your close to success here, its probably something over looked

Catalina installed successfully on my second SSD,
Steps I followed :
1. Created Catalina 10.15.3 USB with UniBeast 10.0.0 on Mojave Hackintosh
2. Opened USB, deleted entire folder that named with “EFI Backups” in USB, Downloaded
Emulated NVRAM v2.4k r4961 from tonymacx86.com download section. Open downloaded r4961 & unzip r4961, install the package(choose USB as destination) , Done.
3. Download MultiBeast 12.0.0, copy the zip file to USB.
4. Reboot, Follow the tonymacx86.com catalina installation guide for BIOS sertings.
5. Finish the process(Follow the catalina installation on tonymacx86.com)
6. Open multiBeast.app from USB, select quick start>UEFI, Drivers>Audio>AppleALC, Bootloaders>clover UEFI Boot Mode, Customize>Graphics configurator>Intel HD 630+CoreGraphics Fixup AKA WhateverGreen
Install these.
7. Reboot.
WiFi woking
Audio working
Graphics working
Booting more fast than ever.
Having doubts, I don’t know why these setup working for Z370P D3, samsung SSD 850 250gb, i38100 coffelake, onboard UHD 630 graphics.
