it means you need to edit/amend your config.plist as you need to do every time you update OpenCore

I did not do any updates, i was in windows and when tried to go back into OC that is the error i am getting. I cannot even reach the boot loader anymore

It just sits on that screen with no progress

you still need to edit your config.plist to sort those issues out regardless

then use ocvalidate on the config.plist to make sure there are no errors

yes, because you have issues that needs sorting out
How would it have been working and then just died when i went to Win 10 and came back.

Yes, I have 3 M.2 drives in the PC

What can happen is that Windows updates something automatically then writes to the default EFI partition. This may not be the actual Windows SSD. Windows uses an EFI partition too, if it is the UEFI version.

So as @Feartech says, you need to "repair" your Mac EFI and config.plist. Likely Windows has stamped all over it.
