Hello, below is my current build... how much power do I need to run this stuff?
I don't want too little, but I also don't want too much overkill as well...

cpu: Intel Core i7 6700K 4.00 GHz Unlocked Quad Core Skylake Desktop Processor, Socket LGA 1151
https://www.amazon.com/gp/product/B012M8LXQW/?tag=tonymacx86com-20

mob: Gigabyte LGA1151 Intel Z170 Micro ATX DDR4 Gaming 5
https://www.amazon.com/gp/product/B014SL2XKQ/?tag=tonymacx86com-20

ram (x2): Ballistix Sport LT 32GB Kit (16GBx2) DDR4
https://www.amazon.com/gp/product/B01AG9EZ6E/?tag=tonymacx86com-20

case: Fractal Design Node 804 MicroATX case
https://www.amazon.com/gp/product/B00K6OVG0I/?tag=tonymacx86com-20

HDs: Toshiba X300 6TB Desktop 3.5 Inch SATA 6Gb/s 7200rpm
https://www.amazon.com/gp/product/B013JPLKJC/?tag=tonymacx86com-20
(I'll be running (6) 6TB drives AND (2) SSDs)

I plan to run this as a big Plex server, with OSX as my OS of choice.

It should be noted I'm only going to run a graphics card during the setup/installation of OSX, then it will be removed as I'll be running a headless system from there.

Any advice is greatly appreciated! Thanks in advance.

The calculator at OuterVision (http://outervision.com/power-supply-calculator) says you need just 294W (with no graphics card). I would go with a good quality 500-600W PSU to be safe - plenty of power but not too much overkill.

The CPU and motherboard are the two areas where I would make changes to avoid overkill.

I would not spend over $300 on an I7-6700K for a server. You could save some money by going with a Skylake I5 CPU. Do you really need a motherboard like the Gaming 5 with all the features for gaming ? It's got 3 graphics card slots, an expensive audio chip that you'd never use and many overclocking features.
