PSU Power buying advice? How much do I need?

Hello, below is my current build... how much power do I need to run this stuff?
I don't want too little, but I also don't want too much overkill as well...

I plan to run this as a big Plex server, with OSX as my OS of choice.

It should be noted I'm only going to run a graphics card during the setup/installation of OSX, then it will be removed as I'll be running a headless system from there.

The calculator at OuterVision (http://outervision.com/power-supply-calculator) says you need just 294W (with no graphics card). I would go with a good quality 500-600W PSU to be safe - plenty of power but not too much overkill.

I also don't want too much overkill as well...

The CPU and motherboard are the two areas where I would make changes to avoid overkill.

I would not spend over $300 on an I7-6700K for a server. You could save some money by going with a Skylake I5 CPU. Do you really need a motherboard like the Gaming 5 with all the features for gaming ? It's got 3 graphics card slots, an expensive audio chip that you'd never use and many overclocking features.
