I'm going to assume the EFI on the HDD has been corrupted somehow and it's loading in the EFI from the USB to boot up properly - although I do have graphical issues that I never did before, assuming its not properly reading the NVIDIA drivers even though I have them installed ... if that's the case how would I go about setting up a new EFI on the main drive to boot up into to load MacOS?
 
Like I said previously - I can't see another EFI on a USB stick in that screengrab, so I can't make the same leap you are doing.

Really you need to load UniBeast and the macOS installer. Then instead of installing anything, go to the Tools menu, or menu in the centre of the screen, and select the Disk Utility. Then you can run a First Aid check on your main drive. You can't do this from the drive itself because it needs unmounting etc.
