@Rikoshet Since this is a production system, it's a pity you didn't pick a Z490 Vision D or G: You'd have a fully working system, including Thunderbolt, based on a Golden Build. Z590 is still rough, and its Maple Ridge Thunderbolt is being actively investigated in another thread; I hope you don't need Thunderbolt for now.
Ohchang's build is a Z590 Vision G, so a slightly different board. The IM thread uses a custom DSDT, which would require studying the original DSDT in detail to understand the patches—basically, I fear this is not a maintainable EFI if you're not MaLd0n. I'm a bit wary of the mix of VirtualSMC and FakePCIID in the Github repository. So, @tsanko.dimitrov 's build would also be my favourite starting point for a clean OpenCore folder.
Can you share your current config.plist (minus serials)?
Later versions of BigSur have issues with the XHCI port limit patch and USB mapping. It would be best if you could first boot with Catalina (or an early version of Big Sur, 11.0 to 11.2), map USB ports there (the other threads show the HS/SS personalities but not the 0x## port numbers, which is what one really want to write a USB map) and then upgrade to 11.6. I'd be wary of jumping early to Monterey on a production system.

Edit2 My bad. Z590 still allows for 10th generation iGPU to work headless—but not to drive displays. So an iMac20 SMBIOS should be the best fit.
