Dell Precision 5820 - Xeon w2125

npci=0x2000 seems to be required on all C422 or C621 systems. But that's unrelated to verbose boot ('-v'), which is not in your config.plist—I suppose you trigger it from the Clover boot screen.

You have both AppleALC and VoodooHDA, which is one too many, and inject '7' for audio although there is no layout 7 for ALC255. @Sylvain83 could not find a fully working layout, so maybe it's VoodooHDA which does the trick?

Catalina and later spit out an number of 'Err' which are not actual errors.
Failure with Clover 5142 may be due to wrong setting for the OpenCore-derived Quirks section.

I'm not familiar enough with Cover to suggest improvements to your EFI. But I may help with OpenCore.
If you're willing to try, here is an OpenCore 0.7.5 EFI with VooddoHDA instead of the usual AppleALC.


Note Serial numbers should be kept private. Please edit your above post to remove the EFI folder and replace it with a version without serial numbers in config.plist.

Wow, a 123 ko DSDT. That's light! And very simple to setup.
NVRAM implementation doesn't look different from others I've seen. So I suddenly have a doubt. Installing a Monterey beta is a good sign, but have you tried to create a custom entry in NVRAM to see if it survives across reboots? (Terminal: sudo nvram MYVAR=THIS_IS_A_TEST, reboot, nvram -p and look for your custom variable, which can be anything as long as there was nothing of this name before—so no need to clear beforehand with "nvram -c".)
Else, I just add a SSDT-PMC to fix that and finish an updated EFI with regular OpenCore. Workstation/server boards are typically slow to boot, but not using the debug version will shave one second or two. ;)
Do you use DSDT patch or SSDT patch on ACPI?
 
With OpenCore the recommended manner is to add SSDTs and leave the DSDT untouched. As you can see in the above EFI folder, not much appears to be required.

Unfortunately, being stalled at EXITBS:START can have many causes.
Please double check all BIOS settings and quirks in config.plist. You may post the config.plist, or EFI folder, without serial numbers for us to have a look.

Unfortunately, I also have no luck installing MacOS Big Sur on my Dell 5820 Tower-X. Here is a short specification:

Dell Precision 5820 X-SERIES Tower Workstation
Intel Core i7-9800X
32 Gb (4x8) Ram 2666 MHz
Radeon Pro WX4100 GPU

I have already tried different configurations. Unfortunately, to no avail.
Below is my EFI folder. Do you have any ideas?
