I am doing the same, just bought the z370 board now to be safe in terms of availability. They are indeed already starting to disappear from the market.
So now I've seen that the new i9 is out on the New CustoMac Pro List.
Has anyone that have already succeeded on building an Hackintosh with the latest "Ultimate Buyer's Guide" components and Mojave?
I would like to build or upgrade mine. What do you think is better to do?

If you can sell your X79 system and build new that would be the best way to go. I don't see much benefit from upgrading the older X79 system, unless you really need the extra PCIe lanes. It all depends on what you do with your system and the available money you have to spend.
A Z390 motherboard and an I9 8 core CPU will be a major upgrade. You also get dual TH3 ports onboard.
