Stock 5700 by AMD...but i don't know how to configure frame-buffer/inject to make give it more than 14MB and enable acceleration

I think you need to wait for the kext update.

5700XT has ID 0x731F1002, 0x73101002 must be the 5700 model.

Maybe you could try injecting that to see if it works?

Now that the RX 5700 appears to be getting support in Catalina, does that mean it is also supported in High Sierra and Mojave? Or will I need to upgrade my macOS to make the card work?

They'll never back port it. Ever. An upgrade will be required.
