While OCLP patch itself doesn't, replacing IOSkywalkFamily.kext may break I225 ethernet if it is attached to dext driver. For this case, you'll either need to use AppleIGC.kext or AppleIntelEthernet210.kext(with e1000=0) from macOS Monterey.

As others have suspected, your config.plist has no SystemProductName defined; hence, the no supported OS message. You should be using iMac19,1.
You can try the commands below in recovery to boot.
mount -uw /Volumes/NameofYourVolume
bless --mount /Volumes/NameofYourVolume --bootefi --last-sealed-snapshot
Once you are able to login, revert root patches, reboot, then apply OCLP version that works for your system.
