Everything went ok except my dell UP275K show as 2 displays instead of 5k. I dropped the vegagraphicsfixup and it still makes no difference.. any ideas?

Yes, I did and it works fine. I only speculated it might be because of the 5K screen, because that's about the only difference between my build and pastrychefs' build. I heard that the current beta of 10.14.5 fixes most of the bugs with Vega 56 and 64, fans speeds, etc... I will wait an see what...

yes, secure boot disabled and other OS.. works for me. And make sure the ssd with clover is 1st on the list of disks otherwise it will boot into windows without ever loading clover.

How often does it happen for you? In my case, it used to randomly happen every minute.
