Thanks. Your suggestions led me to re-examine my Multibeast options. I had accidentally chosen IGPEnabler=No in Multibeast, so this was my issue. I reinstalled my multibeast build. As soon as I booted, it recognized my monitor, recognized my VRAM as 1500MB+ (previously was only seeing 7MB)...
