Gigabyte Z390 M Gaming build with working NVRAM

But when I choose Mac OS on the OC Boot picker, it blocks at the apple logo black screen + the progress bar and nothing more happen

I think you should boot in "verbose" mode which will, hopefully, give you a screen of scrolling text during the boot process and stop where the problem likely is. You can photo this and attach it to a post.

To do this either add a "-v" boot argument to the NVRAM line starting with 7*** in your config.plist, or press the CMD+V keys when at the boot picker menu, then select your boot option.

Well I have a feeling the "Little Snitch" app you have installed might be a stumbling block. There are known issues when updating macOS to the latest.

Can you still boot Catalina and disable it?

CFG lock is disabled, and I modify my BIOS set up as post #1.
Better but not ok.

Did you add "agdpmod=pikera" to boot-args?
 
Can I add it with OC configurator ? Or do I need another soft ?
