Right now? My guess would be the 16GB Radeon RX6900XT. That has support under Monterey.

The Radeon Pro WX 5100 8GB card, would give the RX 560 single slot card a very good run for its money, depending on what usage it was put to.
The two tables below show the Relative Performance of the two cards, as reported by TechPowerUp.

Finding one for sale at a reasonable price is a different matter!
Also it is a Pro card, so it is not meant for gaming.

Another Workstation single slot card - Radeon Pro WX7100 would be even better.

There's even a more powerful WX 9100 that is macOS compatible. Costs a fortune right now.
It's also more of a dual slot card so that takes it out of consideration.
