Unfortunately I don't understand the log, I see where the issues are, but no how to solve them
These can be ignored for now. But please note that these warnings are caused by the following mismatch:
  • You are using a version of OpenCore that is earlier than 0.8.0
  • But your config.plist is formatted for OpenCore 0.8.0
  • Those parameters in your screenshot exist in OpenCore 0.8.0, but not in earlier versions
You can fix these warnings by upgrading to OpenCore 0.8.0.

I have fixed the first error message with update to 0.8.0, but that doesn't solve the installation problem. Did you see anything in my video logs?

[UPDATE] I rebuilt the USB boot, now I pass the 2 apple logos with the loading bar, and it opens on a gray screen with the cursor that I can move

Please try attached config.plist. But after copying this file to EFI partition and rebooting, perform a Reset NVRAM at the OpenCore boot picker. When computer restarts and comes back to OpenCore boot picker, begin the macOS installation.

So! I have follow your instructions, but it come back to the screen with mouse & keyboard offline, and usb don't work ..

The only thing I can suggest at this point is to start with the generic OpenCore EFI and instructions provided here:
 
Actually I reenabled Intel VMT in the BIOS, no issues so far. I needed that to run Parallel desktop. All the best
Good to hear this! I rely on docker and VM for development as well.
In my motherboard it's called "intel (vmx) virtualization technology", this is what you are talking about right?

Yes that is correct. Also enable vt-d

I don't understand, I redid several times everything we did in our exchanges, impossible to get out of "no usb" mode, I put back my previous EFI folders, I redid our exchanges step by step, nothing works, while I haven't changed anything...

You have to bear in mind that you are using a Z690 USB configuration but you seem to have a B660 chipset.

These are not the same. Although they are both Alder Lake the B660 has a different USB port allocation.

You should dump the DSDT tables, find the one for USB and use that as your reference.

OR simply create a new SSDT (or USBPorts.kext in preference, going forward, instead) using the Hackintool.app.

[SOLVED]
I solved the issue and success to install macOS Monterey, here is what I did:
- I took the EFI folder from this topic, I had previously taken only the config.plist
- I corrected some details to adjust it to my build
- I updated OC to version 0.8.0

The installation was able to work without problem, now it remains the post-install and check that everything works
