XPS 9360 Installation stalling at 2 minutes left

At what stage of the install process did you capture it?

This one is finding (a boot target) only install_osx on USB.
Did you remember to disable "fast boot" in BIOS?

Are these partitions from a previous install?

Those partitions must be from the previous install attempt, even though it's not able to find any boot targets on them?

Fast boot is disabled

preboot.log was captured once I reached the clover menu.

Ah. I went through the install (2 mins left), crash/reboot, then captured it once I reached the clover menu.

You might look to see what is on the macOS partition.
 
photos attached. It looks like there are all the right files present, but I'm lost as to why it's not showing the macOS Hard Drive after rebooting.

Well, you'd have to look a little deeper than that (eg. verify the files that Clover is looking for is present).
You might try a more recent version of Clover. Lots of churn in the boot target detection code lately (in loader.c).
