Yes, I use Parallels and I am able to boot my Windows 8.1. Then if I want to do gaming I simply reboot the Hackintosh and select windows via the bootloader.
The only downside of running Windows in a VM from a dual boot system is that you cannot/shouldn't suspend the VM. This will cause problems if you try to reboot into windows. Parallels is smart enough not to know not to do this.
