My late 2013 MacBook Pro, being too old to use properly current video editing software, and an iMac being too expensive and 2017 configuration, I decided to purchase an assembled computer but with components which were known to be compatible to make a hackintosh. I choose a "Fafnir" computer by Materiel.net (this model is no longer marketed), a LG 4K screen and a second SSD to have OSX and W10 in dual boot (each system installed on its proper SSD).
Installation
Here is the method I used to achieve my High Sierra hackintosh.
Step One: Bootable USB Installation Key
I followed this guide to create my UniBeast bootable USB key with a copy of MultiBeast (10.4.0) in it:

I did that on my MacbookPro after downloading High Sierra
Step Two: BIOS Settings

I first upgraded BIOS to F7 version. Then I selected "Load optimized defaults" in "Save & Edit". The parameters I changed:
- MIT > Advanced Memory settings > Extreme memory profile (X.M.P.): set to "Profile 1"
- BIOS > CSM sopport: set to "disabled"
- Peripherals > USB configuration > XHCI hand§off: set to "enabled"
- Chipset > VT§d: set to "disabled"
All the other parameters where set as shown in the guides I mentioned above- BIOS > CSM sopport: set to "disabled"
- Peripherals > USB configuration > XHCI hand§off: set to "enabled"
- Chipset > VT§d: set to "disabled"
Step Three: Installation
I first selected an APFS partition to format my SSD.
Then I selected "Boot Mac OS install from install macOS High Sierra".
Then installation went well and restarted 2 times.
After that I choose "Boot Mac OS from High Sierra" to launch High Sierra.
Step Four: MultiBeast
I launched MultiBeast from my USB key and adjusted the following parameters
Quick start > UEFI boot mode
Drivers > audio > Realtek ALCxxx > ALC1220
Drivers > Misc > FakeSMC
USB > Remove XHCI USB port limit (this option to activate the USB 3.0 ports)
Network > Intel > AppleIntelE1000e v3.3.6
Customize > System definitions > iMac > iMac 18,3
Then I build it and restarted the computerDrivers > audio > Realtek ALCxxx > ALC1220
Drivers > Misc > FakeSMC
USB > Remove XHCI USB port limit (this option to activate the USB 3.0 ports)
Network > Intel > AppleIntelE1000e v3.3.6

Step Five: Nvidia Drivers
High Sierra didn't recognize my GTX 1070 Ti, natively. So, I downloaded the Nvidia driver at the link below and installed it:

What Works Well
- Ethernet works well except after sleep mode (but I don't use sleep mode then it's OK for me).
- iMessage and FaceTime didn't work the first time. I just entered my Apple ID and password in "Preferences > iCloud" and it was OK after that.
- USB 3.0 works well (I don't have USB 3.1 devices so I can't test it).
- Shutdown is OK without doing anything (LEDs and fans stop).
- Sleep mode is nearly OK: motherboard LEDs stop, fans stop but the memory bar still light.
- Audio didn't work at the first time but works well now after installing AppleALC.kext and Lilu.Kext (thanks again to @HackaShaq and @jamesst20) with Kext Wizard 3.7.10 that I found more easier to use than Clover (https://www.osx86.net/files/file/2136-kext-wizard-3710/).
- DisplayPort works well without doing anything (only video).
- WIFI: just put the card in a PCI-E slot and it works
- bluetooth.
What doesn't work:
- HDMi/DisplayPort audio. I tried several methods I found on the forum but I didn't find an easy method which works (my English isn't very good so advanced methods aren't for me...)
Final Thoughts:
Doing my first hackintosh wasn't as complicated as I expected. High Sierra works quite well with my configuration (except HDMI/DisplayPort audio and Ethernet after exiting sleep mode).
I was tired waiting for an iMac update, and I'm very happy to have done this to replace my old MacBook Pro for video editing use. (MBP is still there as a second computer and for travel use.) And it's about 1000€ less than an iMac which have older components than my computer.
I can now use both macOS and Windows 10 on the same computer; each OS have its own advantages for my use.
