Okay, another vote for -x. I've got some work to finish up right now on my Windows side, but I'll let you all know if everything works out - hopefully from inside Yosemite!

Any additional suggestions for solutions are still welcome.

Before you do anything drastic, make sure you're using the USB installer in a USB 2.0 slot rather than a 3.0
I had a similar problem with my Z77-DS3H, and this fixed it instantly

Okay, man, you ROCK. That was totally it. I guess it's a Gigabyte Z77 thing?

If there were a way of giving upvotes around here, you'd have all of mine.

same problem here. solved with usb 2.0 port...
Board is MSI Z270 Gaming Pro Carbon
