I don't know which chipset Apple is using, but it should mean that 9th gen CPU users will probably no longer need to spoof 8th gen IGPU.

The new iMac system definitions are iMac19,1 and iMac19,2.

actually it should be 19,3
19,1 is the 21" 1080p
19,2 is 21" 4K
19,3 is 27"5K and is the only model with the i9

Also is this something we can go ahead and do or do we have to wait for an update to OSX and. clover?

I don't think they'll use Z390 chipsets in iMacs because it just adds more cost for features that can't be used. The iMacs thermal throttle with no overclock. I can't imagine how slow the i9-9900K will run inside of an iMac. It will never get close to 5 GHz because of thermal throttling caused by the low airflow through an iMac. An overclock over 5GHz in an i9-9900K iMac would melt the Aluminum structure the motherboard is enclosed with. The reports I've read say that the cooling system is completely unchanged from the 2017 iMac. So running the 9900K maxed out would make the fans jet engine loud. Watch for Youtubers to test the new high end 5K iMacs and show how limited that CPU is inside the iMac enclosure.

I believe Apple used Z170 for iMac17,x and iMac18,x. Please see this post for more info.

Just because we don't have access to BIOS to do any overclocking doesn't mean it's not Z170.

Throttling can occur regardless of which chipset they use. If things overheat, throttling will occur.

The i9-9900K should not run much hotter than an i7-7700K if not overclocked. It's still rated at 95W TDP. It's only when overclocked it gets really hot.

Agreed, the 9900K in the 2019 iMac is like putting a V8 engine in a Toyota Prius, not a good idea.

But that chart doesn't have the HD model on it
No Coffee Lake 21"/1080p/iMac, only Kaby Lake 21"/1080p/iMac availability
Similar to no Coffee Lake 13"/no touch bar/MacBook Pro, only Kaby Lake 13"/no touch bar/MacBook Pro availability

Not using Intel graphics means dedicated cooling is available to the CPU. Unlikely, the same Mac Mini throttling will appear in the iMac 27/i7
