Thank you, I understand everything, this evening I will create the DSDT and send it to you.Your EFI is a huge mess. You shouldn't have both Clover and Opencore in the same EFI.
For Big Sur I recommend Opencore. Follow the Dortania guide but when you start to run the install you need to follow the instructions in the link I posted for 3) above.
it will take you to the post that tells you how to work around your problem.
If you can post your DSDT dumped from Windows or Linux with SSDTime - I will see if I can clean up your EFI and SSDT's and check for any problems. I see you have used the pre-built SSDT's - they usually work but I had to adapt a few things to work.
You need two things:
1) a clean EFI that's configured properly for your system (with an Embedded Controller SSDT)
2) follow the install guide for X299 users with broken NVRAM, I shared the link in post #7
I will also look for the procedure of step 3.
