Pre installation troubles

I've acquired my usb drive and am getting ready to load up the OS onto my new computer. However, when working in Disk Utility I was never given the option to select a scheme for the USB. I feel that also may be affecting whether the USB will work with Unibeast as it doesn't want to allow me to select Sierra as an installation type.

Any insight as to a solution would be appreciated.
