AIUI using easybeast or USERFree DSDT turns this option to Yes, so trying it with no will hopefully get you back.

I guess I have to pull my perfectly installed drive out, bring it to another machine, erase it and then go about finding everything and reinstalling all over again?

Well, I'm back to square one. I have to redo the whole thing all over again.

In post-installation, should I just run EasyBeast? Is that best for my config?

Thats the chimera boot screen and is normal for hackintoshes.

You can add

<key>Quiet Boot</key>
    <string>Yes</string>

to your org.chamaleon.boot.plist file (in Extra folder) to make it skip the menu.

Does it matter "where" in the .plist (what order) this is inserted?

I'm sorry if it was me that caused your problem, but I advise you now to make a bootable backup using Carbon Clone Copier or similar so if you make changes in the future you can easily get back to a working system.

Doesn't matter as long as its between the <dict> and </dict> tags

I just got the same today.
Intel DH77DF board
Was working super good with 10.8.2
Since the update it's not booting from SSD, only from USB.

Experimenting with Multibeast makes it worse and will make it unbootable even starting from USB so I need to re-install or go from a previous backup.

Frustrating because it worked fine before with practicly nothing installed from Multibeast.

Sound is working.
GTX 660 works fine.
Trim is ON (Multibeast)
It cannot come back from sleep so I disabled it. Was fine before.
USB seems ok.
Using two monitors without problem.

I hope to solve this booting problem.
Anyone with a Intel DH77DF mITX board?
