Making progress. I am a little new to this, but once I discovered verbose mode, it helped a lot.

boot -v
acpi-dsdt-fix intelgfx
and fixUSB

also injectIntel=false (which is weird bc it is intel graphics on mb).

Anyway I have an m2 ssd, and it does't show up as a target to install the os. So I did some searching and it says to install GenericNVME.kext.

I downloaded it, How exactly do i install this?
 
I am a dumb ass!! The m2 works fine. I just had to go into Disk Utility in the install and create a partition.

I'll post the entire build along with land mines in a new thread.
