CPU: Intel® Core? i7-2600K Processor
GFX: Nvidia Gforce GFX 760
Ram: 16 GB
HD: SATA 1 TB ( Brand not sure, think it is Thosiba)

So I get to the Install screen. Under disk utility I cant see my drive. Just the USB. I have tried to bypass the disk utility, but still no disk available to install on. Everything is set to AHCI in BIOS. Trying to install High Sierra
Very happy for all help

1. Make sure you have apfs.efi in /EFI/CLOVER/drivers64UEFI/
See How to Update + Current and Past apfs.efi Downloads

2. There is a bug in High Sierra where it can't see uninitialised drives.
Go into the Disk Utility, press View > Show All Devices, then quit the program and relaunch it
Following this process, you should see the disk.

If for some reason this doesn’t work then you may have to work out the 'diskutil' Terminal command.
Format the disk in Terminal:
diskutil partitionDisk Disk-Device GPT JHFS+ VOLUME-NAME R

Replace Disk-Device with the device name of the unformatted disk, i.e. /dev/disk0 (if you only have 1 disk it will be this)
Replace VOLUME-NAME with the volume name you want.

3. Certain SATA controllers have issues with AppleAHCIPort v329 (eg ICH10, 5 series, 7 series, ASMedia 1061)
Disks may fail to initialize, not readable or hot plug may fail.
See [Solved] Problem: HDD not supported and try new ICH patch.
