Okay, so...
I'm attaching my working Clover and Your OC just with added SMBIOS. I kept it populated, will be changing it for live install.
Interestingly today I don't have NVRAM issue, but kernel panic still persists.
From this starting point I did in iterations (between each iteration I reset nvram):
1. DevirtualiseMmio -> False = no change
2. Previous step + RebuildAppleMemoryMap -> False = no change
3. All above + SyncRuntimePermissions -> False = no change
as suggested in different thread, still the same kernel panicright after selecting Install boot option.
Update: Tried your OC again just with SMBIOS on Monterey install, I was able to get into installer without Kernel Panic, but stuck on BT/Mouse not found, works with USB mouse, will see whether I'll be able to finish installation.
Update2: Currently stuck on installation on "An error occured loading the update.", will update with progress.
Update3: Bypassed, removed all ramsticks except one and disabled XMP solved the issue as suggested in different thread lol...
Update4: Monterey install successful, BT not working yet. Trying in system update to Ventura = Same Kernel Panic
Update5: Everything works on Monterey after creating proper usb mapping.
Update7: After managing getting everything to work in Monterey, based on your OC I updated it to latest version, updated kexts etc. This is fully working EFI on Monterey on my machine. Might be useful for others with Asus z370-p board
Update8: I don't know what helped, whether updating OC with kexts, or upgrade directly from fully working Monterey, or reseating RAM modules, but I'm finally on Ventura
