Please tell about efi. Are you using my uploaded EFI. If yes then reples wireless kext with this which is for catalina. And remove my usb mapping and add injectallusb
I am using yours, I went in and changed it to point towards my iGPU.

This is all pretty new to new so I hope that I am doing it right. I have removed the USB map, and added the inject all and the airport kext. After that I did a shift/ctrl + r in propertree and then saved the plist. I have it attempting another install now. I didn’t see another Wifi kext to remove when I added the one you posted.
After booting the usb installer I went in to disk utility and formatted the nvme drive to APFS and pointed the install to it. Takes about 90 minutes for it to install so I will check back in a bit. Is my assumption correct that if the install goes right then it should reboot in to the Catalina install where I can finish the post-install configuration and not the usb installer?

Thanks again for the help
yes, keep booting form the usb stick until it has installed and you reach the desktop, may re boot a few times

I tried the rebooting a few times and never got past the installer. I did continue to try and research the issue and found a thread that mentioned it being newer versions of OC, APFS, and Catalina installs. I followed the suggestion of making and edit to the plist under UEFI. After that I was able to continue the install and now have Catalina booted up. Here is a c/p of what I did.

Set UEFI > APFS > MinDate and MinVersion to -1,
the defaults are set to only support Big Sur and up
since 0.7.2
MinDate=20200306 and
MinVersion=1412101001000000 is for Catalina
10.15.4 (19E287)

Got updated to Monterey using the EFI that was posted in this thread. Noticing two small issues so far, I am unable to wake from sleep with my mouse/keyboard. My motherboard is currently sitting outside of a case so I am able to jumper the power pins to get it to wake. The second is no wifi/bt (Intel® 3168NGW) I don't have AirportIt kext installed and am thinking that I need to install the Monterey version of that to fix it. After that the only thing I need to test is dual monitor. is that correct on the Wifi and any ideas on the no wake?

One thing I have noticed when I mount the EFI partition is that there are a bunch of opencore text files being generated. What is the purpose of those?
